Speck - Air Dried Smoked Ham
Austro-Italian style, cold smoked and air-dried ham. This is a truly versatile ham that can be enjoyed with freshly baked crusty bread and a good cheese. It's a perfect accompaniment to any charcuterie board. You can also add it to pasta dishes or salads. Our Speck contains no additives, just free-range Berkshire pork, cured in salt and smothered in black garlic. We then hang the whole muscle in an ancient oak tree on the southern slopes of the Brecon Beacons National Park for 4-6 months.... OK, so the bit about the oak tree is nonsense - but the rest of what we say about this amazing ham is absolutely true.

This is a ready-to-eat air-dried ham, lightly spiced with black garlic and cold smoked using oak whiskey-cask chips. Great on sandwiches, in salads or eaten as part of an antipasti.
